[Tony's Creation]How to make italian meat sauce (Quick and easy)

Detail Instruction:

- 2-3 red carrots              
- 1 onion                            
- 2 tbsp miced garlic

[Tony's Dessert]How to make a perfect Japanese souffle cheesecake

For 7inch to  8inch size

cream cheese 250g
milk 100ml
melted butter 30ml
large eggs 6
all purpose flour 60g 
corn starch 30g
cream of tartar 1/4 tsp (used in egg white)
white sugar 130g

Tip 1: it is bette to use the cake mold which the bottom cannot be removed.  The cake won't get wet easily

Tip2: keep the cake batter between 35-40C before mixing in egg white.

Tip3: it is easier to mix the firm peak egg white into batter than stiff peak.

Tip4: the cake bake in more balance temperature when it is not directly contains with the baking tray with water.  It will impact the cake rising

Tip5: if the cake surface crack, it is too close to the heat source.  Change to lower position or cover with aluminium foil in your next attempt

Tip6: Let it rest in a hot oven can prevent it collapse

[Tony's Creation] Sweet and sour meatballs with Chinese Yam

[Prep: 15 minutes | Cook: 20 minutes| Serve: 4 | Level: Medium] 

.:材料 Ingredients :.
Group A

  1. Ground Pork, 450g
  2. fresh Chinese yam, peeled, diced, 100g
  3. 1 slice of toast, diced
  4. 1 large egg
Group B
  1. 1/2 medium onion, peeled and cut into pieces 
  2. 6 sliced ​​of pineapple, cut into pieces
  3. 1 tbsp minced garlic
  4. Bell pepper (any color), Cut into piece
: Seasoning:.
  1. Soy sauce, 2 tbsp
  2. Sugar, 1 tsp
  3. White pepper, 1 tsp
  4. water, 1 tbsp
  5. cornstarch, 3 tbsp
.:  Sauce mixture :.
  1. 2 tsp of Worcestershire Sauce
  2. 2 tbsp sugar
  3. 3 tbsp Ketchup
  4. 80 ml of hot water
  5. 1 tbsp cornstarch

Step 1:

Mix the seasoning into Group A ingredients and stir clockwise until pork turn sticky.  Divide the mixture into small meatballs evenly.  Heat the non-stick
 pan with 1 tbsp of oil over medium high heat.  Cook until meatballs are golden on all sides.   Add 3 tablespoons hot water.  Cover the lid and simmer until meatballs are fully cooked (about 5-8 minutes).  Dish it up and put it aside.
[ |. '} Tips: Pork will turn stick if you stir clockwise.  Add some cornstarch will help as well.  Moist your hands before divide meatballs, otherwise it will stick to your hands]

Step 2:
Wash and dry the pan.  Heat the pan with 1 tbsp of oil over medium high heat. Add garlic and stir-fry until fragrant (about 1 minute).   Add the onion and 1/2 tea salt.  Cook until the onion is soft (about 3 minutes).  Add bell pepper and stir-fry until fragrant (about 2 minutes).   Add the sauce mixture and pineapple.  Cover and bring the sauce to boil (about 3 minutes).  Add in the meatballs and mix it well.  Dish it up and enjoy it
[ | '} . Tips: Before adding meatballs to the sauce, adjust the taste of the sauce accordingly.  If too sour, add more sugar.  Or add few drops of vinegar if it is too sweet.  Also make sure the sauce is thickened enough.]
